It won't be an easy task for you but will bring much joy into your and the blind member's life. I worked with a deaf Stake Family History Consultant several years ago via the phone/internet. It was a challenge but we both had a great experience.
You will probably need to get a scribe for her to assist as you teach. Bless you for reaching out.

I remember the joy I had when I worked with a blind sister in our ward and we walked the steps together.Admittedly it was hands on and not remote but the same principals could apply digitally. We talked together at each step of the process she heard my verbal thought questions, my laughter when I took a wrong turn, my gasps of delight when I made a discovery and I talked through each step of the thought process involved. She heard me chastising myself when I did something silly and we laughed together when we were successful. Census discoveries gave us something to talk about as we both speculated on the condition of the family we explored the surrounding geographical area and talked about life in those times and what socially the family would have been going through. It was a learning curve for me as researching is usually a quiet introspective thing but I learnt to speak my thoughts and describe in detail everything my eyes could see, it made me look harder and appreciate everything I take for granted quick visual scanning needed to be slowed down and described in detail.We enjoyed a closeness as we journeyed together.
