Didrich Hinch/Hinck/Hink (ca. 1783-1805)
He was a sailor (matros) from Hamburg in Germany who settled in Norway. He is listed in a military list (not enlisted, just registered)
in 1804 http://digitalarkivet.arkivverket.no/gen/vis/215/pp00000000010285
and 1805 http://digitalarkivet.arkivverket.no/gen/vis/213/op00000000012813
He marries widow Susanne Agnethe Kofoed in 1804 http://digitalarkivet.arkivverket.no/kb/vi/person/pv00000000780561
They have a son Klaus in 1804 https://www.digitalarkivet.no/view/255/pd00000009178391, dead 16 weeks old https://www.digitalarkivet.no/view/267/pg00000000136626
and a daughter in 1806 http://digitalarkivet.arkivverket.no/kb/dp/person/pd00000009178880
Susanne Agnete remarries in 1812, so he is dead before that, but I haven't found his burial.
I'm looking for his birth and family in Germany. Any advise on wher to search?

If he was really from Hamburg his birth record should be in one of the Hamburg church books. Hamburg was already a large city at that time and there were at least five main churches, and many more in the surrounding area. As far as I know the church books of the Hamburg churches are in the Hamburg State Archive (https://www.hamburg.de/bkm/hamburg-state-archive/), but unfortunately they are not available online. Without more specific knowledge one would have to sit down at the archive and search all these church books for his name.

Thank you! I'll just have to wait for digitalisation. No hurries, he's been dead for more than 200 years 😆 Just a little annoying.
