Date FencePosts for what is available for birth marriage death in Canada
I am wondering if there is place that tells us when each of these records is released to us. It would be nice if there was a WIKI or something that kept track of this somehow, as I suspect it is unique across the globe.

Have you tried the FamilySearch wiki?

There are many different types of records, all with different availability and starting dates. FamilySearch Wiki gives an overview. Canada is a big place, and the different regions have different types of records available, so you really want to narrow your search. Quebec has very early baptism, marriage and burial records in the parishes (especially Catholic records; Protestant records are later); census records start much later (and vary in the different provinces).
Here is a link to an introductory article in FamilySearch wiki - Canada Vital Records of Birth, Marriage, and Death • FamilySearch but I think you may need more detail. FamilySearch has records but there are also other sources as well, such as Ancestry.com, and others. The 1901 and 1911 censuses are very nicely indexed on automatedgenealogy.com (which is free). There are a wide variety of sources; a lot will depend on the region and time period you are interested in. Again I am most familiar with Quebec, and (surprisingly), the further back you go, the more information is available (since it goes back to a smaller number of well-researched original settlers in the first hundred or two hundred years. Check the wiki for the region (at least the province) you are interested in, is my suggestion.
