Danzig was a large city and had several churches and parishes. An overview of the available church books and where they are archived can be found here: http://westpreussen.de/pages/forschungshilfen/kirchenbuecher/quellen.php?ID=57
only in German, you can translate with Google or your browser's translate function.
FSL has also several church books from Danzig: https://www.familysearch.org/search/catalog/results?count=20&placeId=5061029&query=%2Bplace%3ADanzig&subjectsOpen=338837-50,376594-50, however the original films are locked as far as I see.

Hello @agnès guénard
"I‘d to know more about Anna Maria’s parents. They were German and catholic, I think…but I don’t know anything else about them. Niâmes, from where, activities…."
Comment: the marriage record (year 1888) of Robert Ludwig Violet, son of Prosper Violet and Anna Maria Brasch has information as to which religion his parents belonged to (see entry number 64, column 3 "Eltern"). The mother Anna Maria was noted as "ev", so it seems that her parents would not have been Catholic but were instead evangelisch.
I would appreciate any addition and correction to my transcription of the part about the parents:
+ K?y Doll?
Prosper Violet
+ Anna Maria geb Baas [I read the maiden name as "Brass" in her marriage record and in her burial record, and it will need to be determined if "Baas" is an acceptable spelling variation of the name?]

Other records are attached for comparison to the marriage record of Robert Ludwig Violet:
2) Baptism of Robert Ludwig Violet (source: Stolzenberg, Danzig, baptism Kath., year 1833, 2nd entry)
3) Possible first marriage of Robert Ludwig Violet and Wilhelmine Louise Rathke (source: Danzig, marriage Evangelische, year 1864, entry 32)
4) Marriage of Prosper Violet and Anna Maria Brass (source: Stolzenberg, Danzig, marriage Kath., year 1815, last entry in 1815)
5) Burial of Anna Maria Brass (source: Danzig, burial Kath., year 1867, last entry)
The baptism of an Anne Mar. Elisab. Braas, is fitting as for the year of 1793 and is of an Evangelische church but I cannot confirm that this Anne was the same person as Anna Maria Brass who was the wife of Prosper Violet - this could be a possible match. The marriage record of Johann Brass and Anna Maria Zobel seems to probably be the same couple as the parents in the baptism.

I read the occupation of Prosper Violet in the marriage record of Robert Violet as "Franz[ösischer] Dollmetscher", i.e., French interpreter.
In the marriage record (image 4 above) it is stated that he was born in "Savoyen" (French: Savoie).
