Is this a farm name?
I cannot decipher this farm name. (I think it's a farm name)
Here's a link to the whole record. It comes from 1788 birth records for the Vestre Aker Parish.

I'm not sure; it looks like Thosony-Eyer, but I can't find the location.
The family is on FamilySearch at https://www.familysearch.org/tree/person/details/2S3P-TS3
According to the family tree, the twins have a sister named Torine. Her birth record lists her parents as being from Sandager Bakke. A brother Andreas is also listed, and his birth record lists the parents as being from Troschow-Saugen; I believe this is Torshov in the Oslo borough of Sagene (see also https://www.familysearch.org/wiki/en/Torshov_Parish,_Oslo,_Norway_Genealogy).

I cannot find a farm book for Thosoug. There are several hits for this location in Digitalarkivet, but don't know how to get any further than this. https://www.digitalarkivet.no/en/search/persons?s=thosoug

Sandager Bakke appears to be in Denmark (which might explain why I have not been able to find marriage records in Norway. https://www.familysearch.org/wiki/en/Veggerby_Parish,_%C3%85lborg,_Denmark_Genealogy
But from what I can tell, online records for Denmark don't go back into the 1700s. (Is there a trick to those that I am missing?)
If I am going to research records for Torshov as well where should I look for those? (It appears it wasn't its own parish until the 1900s, so it would have been part of another parish before that, right? I'm trying to follow what the linked article says, but I'm still not sure where to go.

Thosoug may be Thosough--see https://www.familysearch.org/wiki/en/Gjerdrum_Parish,_Akershus,_Norway_Genealogy

That's correct, Sandager Bakke is in the Veggerby parish in Denmark. The Veggerby parish records go back to 1740 (look up Veggerby in the "Arkiv" search bar at https://www.sa.dk/ao-soegesider/da/geo/geo-collection/5); I don't know what year you're hoping to find records from.
According to the FamilySearch page I linked above (https://www.familysearch.org/wiki/en/Torshov_Parish,_Oslo,_Norway_Genealogy), "In 1929 the part of Sagene parish that was east of the Aker river was taken and called Torshov parish." This means that Torshov was part of the Sagene parish before 1929--so you'll want to look in Sagene for church records.

It is not a parish, but a farm within a parish. If the parish is Aker, it is located in Akershus County. There are several name variant for this farm name, and it is most likely listed in several parishes. There are several books for Aker, Akershus, Norway, but as Aker is now located within the city of Oslo, the farm books are not as detailed as for a rural parish. . The ending Thosougeye, eje, eie, or eije means that this is a tenent farmer farm. It is a small place where a tenant farmer live, not far from the owner or user of a farm. A farm could have several small cottages where tenant farmers were allowed to stay while working for a farmer. A tenant farmer (husmand) could work for a farmer for a while then move and work for another farmer. Therefore the name of the farm will change a the tenant farmer moved. If you can find the name of the head farm, then it is often easy to check toward the end of the chaper where the sub placses or tenant farmer lived.
