Philip, Go to your tree view (the main page of your ancestry), and click on the name of your mother in the tree. In the small window that pops up with her name in blue at the top, click that name. It will take you to her "Person Page."
Make sure you're on the "Details" view of that page (first item in the top menu bar just below the person's name with birth/death dates and the Person ID (PID). Once you're on the "Details" page (it will likely go there automatically for you), scroll down until you get to the birth and death dates. You will notice that there is the word "Edit" in blue just to the right of the word "Birth" or "Death." Click "Edit" and it will take you to the "Edit Birth" or "Edit Death" window. Simply change the dates you need changing, and make sure you "Standardized" date. You're done!
Just follow those same steps for almost anything else you need to change for a person.
I highly recommend you spend some time using "The Family History Guide" [https://www.thefhguide.com/]. You can select from among four of the most popular genealogy/family history sites and learn everything you'd need to know about how to use them without having to ask questions here and then wait until someone answers. The Family History Guide is the single best resource around for quickly and easily learning how to use FamilySearch. And since you're logged into the "All Temple & Family History Consultants" group, I'm presuming you have that calling. So as you work with individuals and families in your calling, that will also be an outstanding resource for you to provide them so they can quickly become self-taught "experts" in FamilySearch (or Ancestry, MyHeritage, and FindMyPast). You can go through little 15-minute mini-lessons and keep building your knowledge quite easily with that, and teach the members you're helping to do the same.

Thanks for directing us to The Family History Guide. I went and watched the first 2 videos and will keep watching to help educate myself on all of this.
