Hi, Jolene,
May I invite you to consider the write-up of this important early American Family/couple in the following link: https://www.findagrave.com/memorial/53116374
This person has placed a considerable amount of research work into this couple's history and I would suggest that unless suddenly new evidence appears on the horizon, Gar Watson's treatise seems to merit some very serious consideration.
Also take care to note that Elizabeth and Thomas do not name one single child with the given name of 'William'... And, IF Elizabeth (and Thomas) use the old English naming pattern with their children and grandchildren are proven to do so, also, then consider that the 2nd born living son might reflect the given name of Elizabeth's father, but use caution; since child mortality ran very high in those days, the 2nd born could have died (and without record).
Check Genealogical Gleanings in England, a publication of many wills proved in the Prerogative Court of Canterbury (which held probating jurisdiction for all "Foreign Parts" including wills for many over in the American Colonies). See www.worldcat.org for this book's availability nearest to you. Or, search Ancestry.co.uk for access to their database online for these very wills and search for a will in any of the northern Home counties of London--including especially, of course, Hertfordshire to see if any mention is made for your (Thomas and) Elizabeth.
Good luck in your on-going endeavor to discover more information about Elizabeth Brewster's background and parentage in England. It looks for all the world as if she and her family came from the general Hertfordshire, and/or other Home counties of the Greater London region.
