Fallon
I am looking for the ancestors of Peter Fallon, a hatter in London ca. 1750-1790, and Patrick Fallon, possibly the son of Peter Fallon, a hatter in London from 1795 to 1836. My Big-Y DNA data suggest that my ancestry goes back through these two ancestors to County Roscommon, Ireland -- probably to a town currently named Dysart (earlier called Thomas Street by the English). I'd be happy for any information.

There is nothing that I can say that will bring you much help.
Considering the years you are interested in. 1750-1790 or even earlier, this is at a time long before the commencement of civil birth, marriage and records in Ireland, which started in the mid-1800's. Thus there will be no birth, marriage or death records for you to find.
The normal place of recourse when civil records are not available, is the church or parish records. However, I feel there will be little for you there either. The surname Fallon would imply the family were highly likely Catholic. For the dates you are focusing on, the Penal Laws were in effect in Ireland. These suppressed and penalized all Catholic (and some Presbyterian) activities. Thus there will be no parish records of birth, marriage or death written down.
Fallon is also a relatively frequently found name in Ireland, which dilutes the effectiveness of any records of potential cousins that you may find.
The dates you have given severely constrain your opportunities. You mentioned that you have already had DNA analysis performed, which indeed may be your most effective tool.

Irish civil registration started in 1864 for Catholics. Catholic records in rural and western areas usually started in 1828 or 1829, when Catholic Emanicipation was achieved.

I'm guessing that you must have a Y-DNA match with a descendent of a man from Dysart? Was this ancestor from a noble family? There may be other records that only relate to noble families that was used to trace back to this ancestor.
