Can't tell from the snippet view of the marriage record, but could it be possible that Margaretha was also a widow when she married Johann Christoph? Then the surname in the marriage record could be her most previous married name, and the surname in the birth records could be her maiden name. Just a thought...

Wow that totally makes since her their marriage record listed that she was the widow of Pockel. Thanks!

Hello @Gailroberts,
I translated record no. 8 (first snippet dated 27 Apr 1762) for you last night. Margaretha was identified in that marriage record as the widow of Johann Georg Pöckel. Thus, her surname in the marriage record is her widowed surname: Poeckl(in).
Here is my translation from yesterday:
8. Johann Christoph Schmidt, day laborer here, a widower, with Margaretha Poecklin, widow of the late Master Johann Georg Pöckel, former mason at Fischbach, were married on the 27th of April after the prayer service by Mr. "Syn"? Deacon Meyer.
In the other two snippets you posted, the scribe is identifying Margaretha by her maiden surname which appears to be Hornfel(in) or Hornfett(in).
