the birth record is for Catharina Seidel, not Schmidt.

Translation:
Catharina, legitimate daughter of Master Georg Seidel, cooper here, and his wife Catharina née Hammann of Bechtelsreuth, was born on 5 March at night between 12 and 1 o'clock, and baptized the following day . Comment:
I am not sure about the word/number before Jahren. It seems to indicate the age of the godmother Catharina Herold. As she is also termed "the godmother of the child's mother" her age should be rather high (70?) - quite unusual.
The last sentence is also a mystery to me. Zeichen der Waag could refer to the zodiac sign of libra (German Waage), but the birthday in March does not fall into that period.

The following is a very far fetched suggestion 😉. To check it, we would have to see a few more entries: does "im Zeichen …" show up in other entries as well?

In the Julian calendar 05.03.1768 is a Wednesday: was that the pastor's way to mention the day of the week?
The hitch is: in reformed Bavaria the Julian calendar was officially abandoned in 1700 … did a few habits survive?

Regarding "Im Zeichen der Waag" = Under the sign of the scales:
In Ernest Thode, German-English Genealogical Dictionary (Baltimore: Genealogical Publishing Co., c1992), on page xviii the author discusses Months and Signs of the Zodiac and adds the following note regarding the signs of the zodiac:
"Note: Sometimes especially in Pennsylvania German family Bibles, dates given with signs of the Zodiac may be several months off from the customary signs of the Zodiac. These signs are moon signs rather than sun signs."

Whilst these dates will not be valid for 1768 - the principle will be the same: unlike the sun zodiacs, there is not one period (of about a month), but several short periods (about 2¼ days) spread all over the year.
