The first entry on image 207 (https://www.familysearch.org/ark:/61903/3:1:3QHV-V3XH-MPCG?i=206&cat=681466) looks like Judex Georgius Saur "Judge George Saur" to me.

I just spent a fruitless hour trying to get the Internet to cough up a translation of these headers. I know there must be one out there; we can't be the first people to want to use these records who aren't fluent in Latin.

I did find this word list at the Hungarian National Archives for common Latin terms in the censuses: https://mnl.gov.hu/mnl/ol/latin_kifejezesek_az_osszeirasokban. It's in Hungarian, of course, which is not a problem for me, but it's nevertheless a tad frustrating. For example, for cubulus it gives "köböl", which is an old unit of volume measure, and I can't figure out how its genitive plural cubulorum goes with seminatura "sowing" (as the heading of the first column of numbers): "sowing of the liters"??

My best guesses at the rest of the columns:

prata falcatorum: nominative plural of pratum "meadow" and neuter genitive plural of falcatus "scythe-y", so "fields mowed"?

vineae fossor~: either nominative plural or genitive or dative singular of vinea "vine" plus some abbreviated oblique case of fossor "digger, hoeman", so some measure of vines under cultivation.

promonthoriu~: some form of promontorium "vine-hill, vineyard". (The Hungarian is literally "grape-mountain".)
