What is the name of the child? Peder? Karen? Both? Is it a birth or christening record? Thanks!

The name of the child is Peder [Christensen], son af Christen Andersen & wife Anna Andersdatter and this is the baptism the 11th of May in the church. Older church books often doesn't give the birth date!
Karen is the name of the woman, that held him at the baptism in church.
She is "t" [perhaps "til"] Hr. Proust Kyndes. [possible wife or daughter of Provost Kynde in Holstebro]
