Its hard to read but its really just poetry. Talking about the body and soul and that kind of stuff.

It is quite a hard inscription to read, but thanks to Google my wife and I were able to figure this out for you by putting in what is legible then making a lot of guesses.
The first three lines are the last three line of an old hymn:
A strictly literal translation of those lines would be:
Plant you yourself then, Jesus, in
my Heart, Soul and Mind
and my Fruit to the Cross secure!
The last two lines were a lot harder but we finally found them and it turns out that this is apparently a fairly commonly used phrase on Norwegian headstones:
Fred med dit stöv.
Velsignet være dit minde.
Peace be with your dust.
Blessed be your memory.

Wow, thank you! I was, of course, hoping there was some genealogical info in those Norwegian words, but the sentiment of that song and phrase is heart and faith filled and is quite touching. Thanks again for you and your wife's efforts!
