The article in the Help center on ordering the fields for indexing says the option to reorder the fields is only available when in the form entry mode. You can reorder the fields in the data entry area when you use Form Entry mode. When you reorder fields, it can speed up indexing because you can make the order of the fields match the order of information in the document.

For other batches in the same project, the fields stay in the order you set until you change them again.

Note: You can reorder fields only in Form Entry. It is not an option when using the Table entry mode.
