The name of my ancestor is Magna Signora Olsen GZ4F-K9R 

I would like to be able to reserve the ordinances. Familysearch doesn't accept her name Signora so I can't reserve the ordinances. I would like to reserve them and share them with the Temple.

The easiest and less complicated solution is to simply remove that middle name and is creating the problem, you will then be able to reserve the ordinances. When that is done, you can add the name back again.

Something to remember, ordinances are completed for people not names
