Dear Family Search,
I would like to change my email address, as the one I currently used is not secure enough. I am finding it difficult to do so and would ask for you assistance.

IF, you are a Member of the Church; THEN, that should be changed 'On-Line' in/through your Church Membership 'Account' (OR, you Ward/Branch "Clerk") - covering all Church networks/systems/apps.
IF, you are a non-member User/Patron of 'FamilySearch'; THEN, you SHOULD be able to that in/through YOUR "Settings", in your 'FamilySearch' Account.
What particularly are you having problems/issues with, when trying to change your e-mail address?

And, as an aside ...
The process of changing one's "E-mail" Address can take, say x24 Hours (ie. next day) to take effect; as, (1) particularly, for Members of the Church, various networks/systems/apps need to be updated; and, (2) simply, for non-members, the "System" still needs time to processes and recognise update the change.
That said ...
For example ...
IF, you did it TODAY; and, it does not seem to have 'take' immediately; THEN, check again TOMORROW - But, if, it has not 'taken', the next day; then, there MAY a problem/issue that needs fixing/addressing by "Support".
Just my thoughts.
