Which sex do I need to choose if there is no sex mentioned in the death registry (see G93K-6BJ and first source which is in Latin)?

Although the message indicates that a gender is required, that's not exactly true. The gender is only required for LDS Church functions.
If you don't know the gender, and the records don't specify, then leave it unknown.5 -

Unfortunately, that is not a dismissible error message. You just have to ignore it.

Why did you delete "NN" as the given name? I do always put "NN" for a stillborn child.

I read the info in the FS Article called "Enter a person with an unknown name …", which was helpful. This article confirmed what I knew; however, I learned a few new things regarding the Vitals "Name" field in the FS Tree person details page.
My two cents (which is off topic): whenever I look at the shared FS Tree of my ancestors and notice there was a change to the data (whether it was my or someone else's previously added data), I'm grateful to read an explanation in the corresponding "Reason This Information Is Correct" box, written by a FS member who made the edit. Even if I don't agree with the change (which in this case was correct), it helps me understand the person's reason (best backed up with a source) and can help to decrease the back and forth changes to data that sometimes results.

After a 5th cousin added the confirmation names in the Vitals section on some profiles:
I removed the confirmation names from Vitals and added them to the Alternate Names section. Then left this in the Reason field for the Vitals name:"In the Vitals section, enter the birth name or complete legal name ... Put nicknames and other variations in the Other Information section" per FamilySearch guidelines:
