Can I find out why a person was deleted from my tree and by who?

You can find out who but to find out why will depend on whether that person put a reason in or if you message the person and get an answer.
Profiles can only be deleted by the user who created them and only then if no edits have been made by anyone else or by an administrator, which almost never happens. So the profile is still in Family Tree. It may have been merged into another profile or, most likely, had the person's relationship to others in your family line deleted.
The easiest way to find the profile is if you have its ID number. If so, just search for that number using Find By ID.
Otherwise, you will need to know who that person was related to. If have you a spouse, child, or parent then go to that profile and check through the Change Log to find an entry like this:
Here the relationship of this child to this set of parents was removed by me. The reason statement shows that that happened because two copies of her mother's profile were being merged. As part of the merge, the relationship to the deleted profile of her mother is removed and a relationship to the surviving profile is created. So in this case no one actually vanished from the family. If I had completely removed Britha from the family, you would still have access to her profile here and could recreate relationships if removing her was a mistake.
Clicking on my name in the Change Log would bring up the Chat box for me to be messaged.

@Chookybirdy Another possible scenario:
Was the person's birth date <110 years ago and was there no proof of death? If so, then someone may have asked support to change the profile from "deceased" to "living" designation. Then the profile will only be visible to the user who created it, hidden to you.4 -
