Trying to find my grandfather
My paternal grandfather was [name removed for privacy of a living person]. He was born sometime between 1934-1935 [date removed] in the Manila area in the Philippines. His mother was Esperanza Ramirez (born 29 August 1899 in Hong Kong to a Philippine father) and his father was Modesto de Cortabitarte [LRCQ-B6T] (born 25 Sep 1896 in the Manila area). I would like to know:
If he's still alive, I'd like to be in touch with him. I'd love to know when he moved to Spain later in life, and where he lived there. I'd like to find a document that links my maternal grandmother (Cleo), [redacted], and his parents. A birth certificate would be useful, or a baptismal record. Any help or suggestions you could provide would be kindly appreciated.

Because the person you are seeking may still be living, the safest approach is to gather historical documents first, then use private channels or official record offices for any current-contact research. You may also consider checking whether close relatives have public obituaries, cemetery records, or death notices, since those can sometimes identify later residences without exposing private information about a living person.
Add your grandfather to FamilySearch as a child of Modesto. Make him living until you can prove a death date. Only you will be able to see his information, but the system will be able to suggest records that may match.
Also, try searching Philippines, Civil Registration (Archives Division), 1902-1945 https://www.familysearch.org/en/search/collection/2018411
and Philippines, Manila, Civil Registration, 1899-1984 https://www.familysearch.org/en/search/collection/1686086
