I am trying to find records for relatives from Germany but now the town is located in Poland so would I look in Poland records or German records and where can I find these. The town names are Schilde and Dolgen but now that it is Poland the names changed to Żołte and Długie

If you start with the FamilySearch main catalog at https://www.familysearch.org/en/search/catalog and enter the place name Pomerania, the first suggested place with records is Pomerania, Prussia, Germany. You'll be directed to a page offering different record types for the location and definitions of the location as part of Prussia.
I usually also try the Keyword field, from that same start page of the catalog because you may get other suggested places or record types: https://www.familysearch.org/en/search/catalog/results?count=100&q.keywords=Pomerania
You can also visit the FS Wiki and put Pomerania in the search box https://www.familysearch.org/en/wiki/Main_Page

    Hope this helps.
