The preferred spouse setting for a profile is specific to you as a user. In theory, any user in FamilySearch could make their own selection as to who they prefer as the preferred spouse; their choice would not affect other users who will see whatever choice they have made, if any. The preferred spouse is used to display relationships in numerous places such as the Pedigree views and the relational tree diagram. For the absolutely overwhelming number of combinations of user and profile, the preferred spouse will never be set by the user, so FamilySearch makes a default choice for that combination. Which one it will choose doesn't appear to be described anywhere, but there is a post somewhere in the community that suggests that it may be the most recently-updated relationship. If you click the SET PREFERRED button on the profile page, you will get to make a choice of one of the spouses. There is no "None of the above" option. So, the short answer to your question is that you can't choose to have no preferred spouse.
The same considerations apply to the child/parent relationships.
In your case, the person you are referring to is living, so their profile won't be publicly visible. The profile may be visible to certain other users if it is part of a Family Group Tree or CET; otherwise it will be visible only to you.
