In the Family Members section where your Simeon is with the wrong parents click on the pencil next to his name. You will see an option to remove him as a child from that couple. Put in a good reason statement when that option comes up.
After you have removed him, then create a new Simeon Easy with the birth information the other user put in as a child for that other couple. Put any sources or additional information that user put onto this new version of that Simeon. That way the other user won't come looking for your Simeon again.
Then make sure by refreshing the page a few times that your Simeon and that other Simeon do not pop up as possible duplicates. If so, mark them as not a match.
This tends to happen most frequently when users don't realize we are all working in the same tree.

I should have looked before I started writing. Even more important to do first is to restore Simeon Easy LWJB-8DZ born 1826. Go to his page: https://www.familysearch.org/en/tree/person/details/LWJB-8DZ and click Restore Person. It looks like that merge was a big part of your troubles. It is better to restore than to create a new individual. Then go to work fixing the profiles for both Simeons. An important part of this will be figuring out which one was the real husband of Elizabeth Froment LHC3-XV1.
