My son has recently passed, he has performed all ordinances while here in mortality, however it is showing "not available." There a reason for this that I am not familiar with. Could it be missing information?

The ordinances are attached to his church record. Has that record been marked as deceased by the bishop or ward clerk and merged with your personal copy of him. My father passed last year and I had to wait 2 weeks for his church record to be marked deceased and the all 5 of his kids have a copy of him and his brothers, and some grandchildren. We had to merge all these records into his church record for ordinances to show for everyone.
