On a Virginia birth record it shows at the top of the page 'year ending 31st of 1861-1862. What date should I put for the year born?

Since there is no definitive answer in either the Project Instructions or the document itself, follow the General Indexing Guideline
If multiple dates were given for a birth, type the earliest date.
