Some of the examples used show it being left off and the following instruction indicates the same.
- When typing the name of the mortgagee or mortgagor, do not include descriptive words or terms, such as "by Atty," "et al," or "and spouse," that may have been written with the name.

If both Mortgagor and Mortgagee are businesses, they need to be indexed as such and not deleted. You follow this in the PI:
If the mortgagor or mortgagee was a corporation or some other kind of organization, type the name of the corporation or the organization in the corresponding Corporation or Organization field, and press Ctrl+B to mark the Given Names and Surname fields blank.

I searched the help section re this question, but I didn't see anything that told me what to do if "both" were businesses. I saw and understand the instruction above to relate to one or the other but I don't see the word or idea of how to handle "both". It does't make sense to me to index an entry with both entities as businesses because we obviously aren't doing temple work for them. I just want to make sure my reviews are correct. Thanks for your response.

@Barton Earl Brower Hello, this is a gentle reminder that not all genealogists or members of Family Search are LDS members, many are historians or people doing research for other reasons. While temple work is of utmost importance to members and families, it is critical that we follow the project instructions when participating in Family Search activities - we are providing a service to the owners of these records, often cities and states or federal government who have kindly shared their records and have expectations that we will abide by Family Search contracts. As a reviewer, we look at the work done by the indexer and make corrections when needed - we only make records available on the internet for anyone to use. Thank you for your efforts in indexing and reviewing. Please follow @erutherford instructions and do not delete these entries where both grantee and grantor are businesses -- these company names are often found in family history stories and could be important to these individuals.

Thank you for being "gentle"... I needed that. Sorry for my tunnel vision of this work. I try and be as accurate as possible and I do read the guidelines for each project before reviewing. I just didn't perceive what I should do with a "both" situation. So another question...many of the entries include what appears to be an "&/or". Many of the the indexers ignore this and just enter names. Some do include this. I have been deleting it since I haven't been able to find specific instructions about it. Help!

You are correct in deleting the &/or. Things like that and Et. al and the words Trust and Consent are not indexed.
