Will there ever be any Cypriot records available to index?
It is something that I don't know we'll ever have any access to! Many records are now available. But there is a distinct lack of Cypriot, Greek main!and/island records to index. Is this because it's through orthodox church records, that aren't readily available? Any insight would be much appreciated.

FamilySearch can only index records with the permission of the record owners. It could be that the governments, churches and other archives in Cyprus and Greece do not want to have their records made available (especially if they charge people fees to view them and would lose that revenue if the records were available on FS). Perhaps the political situation on Cyprus makes FS more reluctant to try to negotiate contracts with record owners. Whatever the reasons, don't expect FS to publicly disclose them or whether they anticipate or plan having Cypriot records to index.
