How do I now locate grant probate?

Jim,
You could try:
Or if you use Search> Records> enter Name and then select More Options> Record Options> Type: Probate - - this may help?
Just change the given name: any and surname: name - to the name you would like to search. You can add other Parameters or filters if you wish.

You appear to be correct. I searched for a source I have attached to a person on my Following list and only death registration, Find A Grave and obituary sources appeared as "results". I did a wider search for (England & Wales) probate records - using just surname and a date range - but nothing comes up, when filtering on either "Probate" or "Collection". Maybe viewing these records is now subject to some restriction, although (as found) sources attached to an ID can still be viewed in detail.
If you know the approximate year of death, you can find much fuller details, than appear in the FamilySearch records, by going to the Find A Will website at https://probatesearch.service.gov.uk/#wills. Make sure you click on "Wills and Probate 1858-1996" if searching for a will in that period, as the "default" search setting is for the "1996 - present period".
BTW - In spite of several requests, FamilySearch never did remove that wrongly titled "Beneficiary's Name". The name in that field usually relates to the executor - who might or might not be a beneficiary, of course.
