Is there any way that I can index the documents that I would like to, or is this restricted to the ones on the projects page?

At this time, there is no avenue to index documents that you want to do or to request that projects be added. The Find a Project page is worthless as it does not list all the projects available. Always click on Web Indexing and use Find Batches to see all the projects available.
