Should I use only my maiden name in my profile? And my mother was adopted. Should I use both of her

That is up to you on how you would like your profile name to appear. It can be helpful if other people see your profile name and recognize a potential family relation, but it is completely up to you. Thank you for posting a question. I hope that helps!

Further to what 'Mitch' has already proffered ...
.
And ...
Just for clarification ...
.
FYI
.
There are basically Four (x4) 'Different' Name formats, in 'FamilySearch', for Users/Patrons.
.
They are:
(1) Full ( Legal ) Name = Used to 'Create' a 'FamilySearch' Account;
..... usually, one's FULL 'Legal' name ... [ Always "Private", for your eyes only ]
.
(2) UserName = Used to "Sign In" ... [ Always "Private", for you eyes only ]
.
(3) Contact Name = Name that OTHER Users/Patrons see displayed for you...
..... [ Always "Public" ]
.
(4) Display Name = Name that is Displayed, on YOUR pages/screens,
..... for your 'FamilySearch' Account ... [ Always "Private", for your eyes only ]
.
Now ...
That said ...
.
Whereas ...
.
IF, you are actually referring to the "Last Name" in the "Vitals" Section that you have recorded against you in "Family Tree" of 'FamilySearch', that will currently ONLY, be seen by; and, appear to, YOU; as, you are still "Living"; and, resides in you "Private Spaces" in 'FamilySearch', that is another matter entirely.
.
Here is a "Knowledge Article" in 'FamilySearch':
.
How should I enter names in Family Tree?
https://www.familysearch.org/help/helpcenter/article/how-to-enter-names-in-family-tree
.
That "Last Name" in the "Vitals" Section that you have recorded against you in "Family Tree" of 'FamilySearch', will ONLY appear in "Public", available to OTHER Users/Patrons, when YOUR actual 'Status' in "Family Tree" of 'FamilySearch' has been marked/made as/changed from, "Living" to "Deceased".
.
IF, you are actually referring to the latter; and, want more advice/help; THEN, please advise.
